Chen's started with one drum grill, a bag of charcoal, and a recipe for cumin-lamb skewers carried over from a night market back home. We never opened a restaurant — and we never plan to.
Instead we pop up: a parking lot here, a street festival there, a courtyard the week after. When the coals are lit, a paper sign goes up and the line forms. When the last skewer is gone, we pack the table and vanish into the dark.
